With Christmas just a week away, we don’t have time for complicated dinners! Even with trying to keep Christmas as simple as possible this year so that we could fully enjoy the season with our kids, I still have a few gifts to buy!

So I love the versatility of this recipe, you can throw it in the crock pot before you head out the door, or dump everything into a casserole dish and stick it in the oven like I did.

Smoked Sausage & Hashbrowns


1 can cream of chicken
1 can full of milk (I mean fill the cream of chicken can with milk once you empty it to measure it :)
1 32-oz. bag of hash browns, defrosted
14 oz. smoked sausage, diced
1 small onion, diced
1 1/2 cups grated cheddar cheese

You can find the instructions here, this quick and easy recipe comes from Lauren’s Latest. Her instructions are only for the crock pot, but I’ve made this successfully in the oven a few times now. Just use a glass cake pan (or casserole dish of similar size) at 350 degrees for 55-60 minutes. Follow the same layering instructions as with the crock pot: hash browns -> Onions -> Sausage -> Sauce mix -> Cheese and cover with tinfoil.

How I speed up this recipe:

I skip the step with browning the hash browns, use the prepared cream of chicken instead of following her recipe to make it homemade and have skipped the onion in the past, too.

This recipe is also good with the O’Brian hash browns that already have the peppers and onions cut up in them, just make sure you are getting 32 oz worth of hash browns if you select those (sometimes the bags are smaller :)
